What's the point of having a physical critical way more than 100%?

Because a lvl75 armor set for rouge/ranger easily gives them physical critical of more than 100%, not including critical from buffs, accessories, and stats.

I know there's a physical critical resistance, but still the critical chance is way more than 100%
